Sivetz Roasting

The majority of coffee roasters still use a drum roaster. Inside the drum, coffee beans tumble around like clothing in a dryer, intermittently touching the hot drum surface which releases oil and frequently scorches the beans.

In contrast, Earthshine Coffee is produced using the Sivetz system of air roasting, which differs dramatically by levitating the coffee beans on a fluidized bed of hot air. This keeps the roasting temperature consistent as it is not dependent on random contact with a scorching drum. Air roasting coffee avoids the bitter tasting tars produced by drum roasting and creates a cleaner, more aromatic roast.
